1 How could a missile destroy tons of weapons? It might have destroyed some equipment to make more. But if you really believe there was a study that proved, not speculated, proved that the weapons were destroyed by a missile could you please link.
2 Given that at the least that is one great shot, how could we assume that it happened? I mean we didn't/couldn't know until after invasion right?

Was this public property? Religious symbols have no place on public property. He was probably offended by the government sanctioned establishment of religion.

He took out all of the crosses that he could. I don't think he stopped to read each one before he destroyed it.

You really didn't answer the question, but perhaps that's because I asked it poorly. Did he take out any cross from a soldier whose parent or spouse had authorized its use?

According to the people there, he took out about 500 of the 800 crosses that were there. I think it's safe to assume that it was random.
The presence of American flags on the crosses did't slow him down, either - is that a capital offense in Texas?
